Ingredients:
- 2 yellow onions, halved thinly sliced
- 7lbs short ribs or a big second cut brisket
- 3 heaping tbsp MAGGIE LOVE TACOS spice blend (OR 2 taco seasoning packets)
- 2 chipotles + 1 tbsp of the adobe sauce from a can of chipotles in adobo
(OR 1 tbsp smoked paprika + 3 garlic cloves, smashed) - 1 bottle beer
Cooking Instructions:
Place meat, onions, spice blend + chipotles in a crockpot. Cook covered on high heat for 1-2 hour. Add beer, cover, reduce heat to medium/ medium low and cook for 6-8 hours until meat is SUUUPER TENDER and falling off the bone. Spoon a few ladles of the juice into a large bowl. As you separate and shred meat add right to the bowl with the juice so that the meat does not dry out. Once all the meat is shredded, you can skim fat from remaining liquid in the crockpot and return all the meat to it to stay warm!Serve with tortillas (gently heat through if using corn, and char a bit more aggressively if using flour) and too with your fave taco add ins! We love, gauc, salsa, radishes + onion (fresh or pickled!), cilantro… whatever you like!
