INGREDIENTS:
- 5 eggs, lightly beaten
- 1 c. oil
- 1 1/2 c. sugar
- 1 tsp. vanilla
- 1 tsp coffee mixed into a drop of hot water
- 3/4 cup of potato starch
- 1/2 c. cocoa
- 1 tsp. baking soda
- 1/2 tsp. (kosher for passover) vinegar
DIRECTIONS:
Preheat Oven to 350 degrees Farenheit
In a large bowl, using a whisk (or an electric mixer), beat together 5 eggs, 1 1/2 cup sugar,and 1 cup oil.
Add in the vanilla sugar, coffee , 3/4 cup potato starch, and 1/2 cup cocoa
In a separate cup mix 1 teaspoon of baking soda, and 1/2 teaspoon of vinegar.
Add to batter and mix until combined
pour into greased bundt pan or a 9×13 pan
Bake at 350 degrees for 40 min
