Eggplant Parmesan 🍝
2 medium (or 1 large) onion
2 green peppers (Hungarian)
2 tomatoes (peeled)
4 cloves garlic
1 small can tomato sauce
3 or 4 dried tomatoes
Basil, cayenne, oregano, and chili flakes
1 large eggplant
Sauce: Sauté onion and green pepper with oil. Add chopped up garlic and let it get roasted. Add mushrooms and sauté until wilted. Add tomato and tomato sauce. Spice. Simmer until not watery.
Eggplant: Peel the eggplant and cut into thick circles. Put 1 tbsp. oil in a baking pan. Lay eggplant in oil. Broil on 350-400 for 5 min on each side.
Assembly: Put 1/2 of sauce in pan. Lay eggplant on it and put on a spoonful of grated cheese. Top with another layer of sauce and more grated cheese. Serve on top of noodles. (with cheese)
