Maki’s Eggplant Parmesan 🍝
A delectable Italian chicken substitute!
- 1 Large Onion
- 2 Green Peppers
- 2 Peeled Tomatoes
- 4 Cloves Garlic
- 1 Can Tomato Sauce
- 3 or 4 Dried Tomatoes
- Basil, Cayenne, Oregano, Chili Flakes
- 1 Large Eggplant
- Grated Cheese
Sauce: Saute onion and green pepper with oil. Add chopped garlic and roast. Add mushrooms and saute until wilted. Add tomato and tomato sauce. Spice. Simmer until not watery.
Eggplant: Peel the eggplant and cut into thick circles. Put 1 tbs oil in a baking pan. Lay eggplant in oil. Broil on 350-400 degrees for 5 min on each side.
Assembly: Put 1/2 sauce in pan. Lay eggplant on it and put on a spoonful of grated cheese. Top with another layer of sauce and more grated cheese. Serve on top of noodles (with cheese).
