My Mom’s Cheesecake

Works great on Passover by substituting lady fingers for graham crackers! Makes three 9 in round cakes.

CRUST:
27 double graham crackers
3 tbsp sugar
1 1/2 tsp cinnamon
2 1/4 sticks butter

Melt butter, crush graham crackers and combine with sugar and cinnamon. Press along sides and bottom of three 9″ round pans.

FILLING:
6 eggs separated
1 1/4 C sugar
1 vanilla sugar
3 8 oz containers whipped cream cheese
3/4 lb sour cream
1/2 C flour

Separate whites and yolks. Beat whites until stiff. Beat yolks with sugar and then add rest of ingredients, adding flour last. Mix just until combined, fold into whites, and divide between 3 pans.

Bake at 350 for 50 minutes to an hour.
